🍽️ The Recipe: Crustless Zucchini Cottage Cheese Quiche
Ingredients:

2 medium zucchinis, grated
5 thin zucchini slices ( for the top)

1/2 yellow onion, finely chopped

3/4 cup low-fat cottage cheese

1/4 cup shredded parmesan cheese

4 eggs

1/2 tsp garlic powder

1/2 tsp Italian seasoning

Salt & pepper to taste

Optional: red pepper flakes or fresh herbs for extra flavor
Instructions:
Preheat oven to 375°F (190°C).
Grate the zucchini using a food processor or box grater.
Squeeze out the excess moisture using a kitchen towel or cheesecloth.
Chop the onion and sauté for 2–3 minutes (optional but adds great flavor).
In a mixing bowl, whisk together eggs, cottage cheese, parmesan, and all seasonings.
Stir in the zucchini and onion until evenly combined.
To make it pretty, lay a few slices of zuchini on top
Pour into a greased 9” pie dish or ceramic baking dish.
Bake for 35–40 minutes, until set and lightly golden.
Let cool slightly before slicing. Serve warm or store in the fridge for up to 4 days.
